Awarded 3 AA Rosettes for outstanding cuisine, Mark has previously represented Scotland on BBC2’s Great British Menu and Great British Menu Does Comic Relief. Here, he reveals his love of all things Edinburgh.
When I hear the words ‘This Is Edinburgh’, the first thing that springs to mind is: this is an easy one, the Castle. It’s a view I never tire of. I also love the city centre all lit up in the winter, it just looks magical, like something out of a fairy tale.
Edinburgh still surprises me when: Edinburgh never quietens down. As a business owner, I have first-hand experience that it’s a busy city all year round. A fantastic thing about the city is that there is always something going on and things to do.
An ingredient/dish that epitomises the city is: the 99 ice cream cone. It was invented at 99 Portobello High Street by the Acari family in 1922. In my opinion, if anything says Edinburgh it has to be that!
My best memory of the city centre is: when I first arrived three years ago. It was December and the city looked amazing with everything that goes on during the festive period.
Edinburgh looks especially beautiful when: it’s Christmas – with all the lights, decorations and markets running along Princes Street. It’s just an amazing way to see the city.
My favourite foodie/wine shop in the city has to be: the Bon Vivant’s Companion on Thistle Street. Not only is it an amazing wine shop but it also sells everything from bottle openers to wine buckets. So a great stop for a gift or an amazing bottle of wine to accompany a lazy Sunday lunch.
