Keep carbs and carry on, advise city bakers

Independent bakers Rachel Morgan and Emily Cuddeford have decided to approach things from a different angle until normal business resumes.

Owners of Edinburgh’s Twelve Triangles, they have closed their shops in Dalry and Duke Street to launch an online store and home delivery service, with the aim of getting goods to people safely while Covid-19 restrictions are in force.

The plan is to keep customers supplied with their signature slow-fermentation sourdough bread, crowd-pleasing pastries and store cupboard essentials, as well as working with local suppliers to offer an extended range of produce, such as Puddledub Bacon, Mossgiel organic milk, Corrie Mains Farm free-range eggs and St Andrews Farmhouse cheese.

The changes to the business model have been driven by the need to keep staff employed and the bakery running, while giving people safe access to good bread and nice treats.

“We have a team of incredible bakers and they all want to be at work so we want to give them that option. It also means we can continue to support our local suppliers,” says Emily.

Rachel adds: “We are trying to gradually increase our stock so our customers have a choice to not have to stand in supermarket queues.

“We have been amazed at their response and the idea of being able to deliver a little bit of joy in these times, and for people to have something to look forward to in their day, means a huge amount. Ironically we feel like we have more connection with our customers than ever before.”

The bakery’s shops at Brunswick and Portobello remain open daily from 8.30am until lunchtime or sell-out, with any unpurchased fresh food being donated to foodbanks, shelters and the NHS.

The new online store can be found at twelve-triangles.myshopify.com/. Orders placed by 8pm (min £15) will be delivered between 10am and 5.30pm the following day.
