What inmates at Saughton Prison will be eating on Christmas day and New Year

A starter of homemade cream of tomato soup with a crusty cob will proceed the Christmas day lunch of chicken breast with a mushroom sauce and kilted sausage or crispy vegetable kiev with a cream sauce, all served with creamed and roast potatoes Brussel sprouts and vichy carrots.

For dessert, they will have luxury individual scotch trifles.

The evening dinner menu includes a traditional meat platter that will be served with spicy tomato pasta, a crusty baguette or seasonal spicy veg burger with potato wedges.

The halal option includes halal chicken breast with a mushroom sauce and vegetable sausage or crispy vegetable kiev with a cream sauce for lunch, while a halal meat platter with tomato pasta and a crusty baguette or a spicy burger with wedges is the evening option.

On New Year's day, lunch will consist of homemade lentil soup with a crusty cob for starter, before the main course of homemade steak and sausage pie or mushroom and brie with hazelnut and cranberry parcel, both served with cream and roast potatoes and mixed vegetables.

A luxury individual cheesecake will follow for dessert.

In the evening, a chicken fillet burger will be served on a floured bap with a mayo sachet and potato wedges. There will also be the option of a spicy vegetable samosa with savoury rice and a spicy dip.

The New Year Day halal offering is a halal version of the steak and sausage pie or mushroom and brie with hazelnut and cranberry parcel, served with creamed and roast potatoes and seasonal mixed vegetables.

Fresh fruit salad with cream will follow.
