Cox, who played Monica in the hit US sitcom, is friends with the Northern Irish singer through her rock star boyfriend Johnny McDaid, 39, of Snow Patrol.
She remained backstage for most of the Elton gig but emerged on to the running track for his encore which included Candle In The Wind and Crocodile Rock.
She happily posed for pictures with spectators and danced along to the superstar’s hits.
One onlooker said: “She looked very relaxed and seemed to be having a great time.
“She was standing on the running track to watch the last part of the concert and was singing and dancing away.
“Quite a few people recognised her and came up and asked for photos and she happily obliged.
“She said she was having a great time and was enjoying her trip to Scotland.”
Cox had earlier posted a photo of her and Vance on the stage at Meadowbank on her Twitter feed.
She tweeted: “In Edinburgh directing @foyvance video for his next single ‘Coco’. Check it out!”
At the concert Sir Elton praised Scots for backing the Remain side in the EU referendum.
He said: “We haven’t seen blue skies anywhere else in Britain.
“That’s because you voted to stay in Europe. You’re the only f***** sensible people in Britain.”
