My perfect weekend: Frederik Laseen

Fredrik Laseen, 28, is a restaurant manager at Galvin Brasserie de Luxe, The Caledonian Hotel.

1 Who would be your ideal weekend companion and why? My wife, Jenny, always my favourite person to spend time with.

2 Where would you take them in Edinburgh? Surely somewhere that would involve good food, a couple aperitifs and a nice bottle of wine.

3 Where would you go for breakfast/lunch/dinner? Love a good homemade breakfast in our garden, then maybe out for lunch down on the Shore in Leith and then no better way to finish than a nice meal at the Pompadour by Galvin for dinner.

4 What one item would you not be without? Shamefully have to admit that I would never leave my phone behind.

5 How would your perfect weekend finish? Love to finish it all off with a nice Sunday dinner in the Galvin Brasserie de Luxe. Just cannot beat that Sunday roast.
