For those of you who aren’t, you can still enjoy food coming from Leith’s police box which has recently transformed into a vegan street food pop up.
The tiny venue, on Leith Walk, will be run by Soulfull Street Food which will provide vegan scran for takeaway on Mondays starting this month.
The team will be keep their menu changing on a regular basis serving plant-based food from some of their local ‘foodie pals’ in the Capital.
The police box will be offering ‘Meat Free Mondays’ in a bid to encourage people to consume less meat and, according to the founders, “cut down on the carbon emissions, pollutants and natural destruction that corporate meat farming contributes to.”
A statement on Soulfull Street Food’s Facebook page read: “For the two of us at Soulfull, Meat Free Mondays is something we are proud to be taking part in.
"We will be doing some old favourites from last season as well as introducing some new dishes for you all to get stuck into.
"By doing our very best to showcase the wonderful, local, ethical and vegan produce that Scotland has to offer we hope that Meat Free Mondays at Leith Walk’s police box can become a chance for us all to consider how we can enjoy banging scran without hurting the planet.”
The Soulfull-run food hub will be open on Mondays starting from January 25.
