Edinburgh's Six by Nico restaurant reveals exciting new menu concept

From the 18 February until the 29 March, the Capital Six by Nico restaurant will be serving up a new menu inspired by The Alps, as Chef Nico Simeone brings a contemporary take on the comforting cuisine found in the mountainous regions of Europe.

Inspired by charming Alpine towns and villages, The Alps menu promises to transport diners across the snow kissed mountain-regions of France, Germany, Switzerland, Austria and Italy with each bite.

The new six course menu will include dishes such as raclette fondue - crispy pigs head with quince; salmon on the Rhine - pumpkin, horseradish emulsion served with apple and dill dressing; tartiflette - barbeque broccoli with pickled walnut and Reblochon cheese.

These dishes will be followed by risotto du crozets - hen of the woods mushroom with truffle pesto and bianco; chicken and pork farcon - hispi cabbage, sauerkraut ketchup and meat sauce and finally a dessert of snowballs - coconut and pistachio parfait, passion-fruit caramel and chargrilled pineapple.

Chef Nico Simeone said: "As we endure darker days during the winter months, ‘The Alps’ themed tasting menu will give guests the opportunity to enjoy a respite of rich and comforting dishes.

"With Alpine cuisine categorised by the different regions of the Alps, we wanted to create a menu of comfort and resilience, inspired by everything we know and love about the stunning Alps region, seeking comfort in its rich and wonderful cuisine.”

Booking for The Alps menu is available now at the Edinburgh and Glasgow restaurants.

The menu will be priced from £29 per person with the option to enjoy an expertly selected wine and specialist drinks pairing for an additional £26.

As ever, there is a vegetarian alternative available for every course as well as pre-dinner snacks to complement the theme.

Six by Nico creates a new menu every six weeks, and the restaurants in Glasgow and Edinburgh so far has showcased ‘The Chippie’, ‘Thai Street Food’, ‘New York’, ‘The Mad Hatters Tea Party’ and ‘Best of 2019’ themed menus in previous months.

The Alps is the first menu to be served at all of Simeone’s UK restaurants at the same time, with his sixth and most recent restaurant launched in Liverpool in November 2019.

The current Best of 2019 menu, which was voted for by diners, consists of The winning six course menu includes: Bombas (Catalonia); Butternut spring roll (Thai Street Food); beef bourguignon (Paris); Milan (Orient Express); Penang chicken (Thai Street Food) and finally for dessert, creme brûlée (Paris).

Speaking about the launch of the online vote, chef Nico Simeone said: “We are always seeking to evolve and improve the dining experience and our guest’s feedback plays a major role in helping us do just that.”
