Stylish bar and brasserie set to open its doors at Newhaven Pier tomorrow

A prominent historic site which overlooks Newhaven Pier and was home formerly to Prezzo will reopen on Friday following a transformation which cost more than £100,000.

Mark Patonyi is the brains behind Pier Brasserie and has 13 years experience in the business boasting an impressive portfolio which includes helping launch and manage the front of house at Martin Wishart’s The Honours, serving Formula One racers at the Grand Prix, and five years as general manager at Picardy Place’s Steak restaurant.

Now, he has taken up a new venture in a business of his own and will bring to the table his experience in fine dining to a more casual environment.

“The detail is really important in terms of cooking, preparation, plating, serving, and knowledge, but we don’t want to be formal as far as we can.”

Unlike it’s neighbour, Loch Fyne, Pier Brasserie will not be a dedicated seafood restaurant, instead opting for a seasonal menu with something for everyone on it.

Mark added: “In general, there will be steak elements, because its something I like and I’m passionate about, there will be fish dishes, salads, we wanted to offer option but flexibility is key, I am keen to offer what our customer’s want.

“I’m not trying to create a competition with any of the surrounding restaurants because I don’t think there’s anything like this in the area that would offer a wide variety of dishes like us.

“I think that somewhere like this just firs really nicely and hopefully, we can start off on a really busy foot and then after it’s just down to us to keep up standards.”

The restaurant has created around 16 jobs including that of head chef, Vladimir Garcik, who previously worked at Steak restaurant and has worked with Mark for many years.

“I came into this country 13 years ago with nothing, no money, no language, nothing at all,” Mark said, “And I think that this is my time to give something back, not just to the industry but to the city as well.”

The new spot will fit in excess of 70 covers and has a separate bar area with the design focused around natural tones and exposed materials, creating a warm shelter from which to admire the expansive Forth.

In the summer, it will be able to utilise the outside decking, creating a cosmopolitan experience for diners and drinkers.
