The Balmoral to partner with acclaimed chef from Michelin Star restaurant to cook one-night dinner
The luxury hotel will welcome a special guest chef later this month
Number One, the four-AA-Rosette fine dining restaurant at The Balmoral, will host a special one-night collaborative dinner with Alice Power, head chef of Michelin-starred The Black Swan at Oldstead.
The event marks a homecoming of sorts for John Munro, head chef of Number One, who spent formative years at The Black Swan before returning to Scotland, where he now leads the kitchen at The Balmoral's signature restaurant. Bringing together two restaurants
connected by a shared culinary heritage, the dinner will celebrate exceptional produce, seasonality and ingredient-led cooking.
Working alongside the Number One team, Alice Power and John Munro will create a bespoke seven-course tasting menu that combines the distinctive approaches of both kitchens while showcasing the finest seasonal Scottish ingredients. The collaboration will reflect the ethos that has earned both restaurants widespread acclaim: respect for provenance, technical precision and a deep connection to the land.
Located in the North York Moors, The Black Swan at Oldstead is renowned for its farm-to-table philosophy, with menus shaped by produce from the Banks family's farm, kitchen gardens and surrounding countryside.
Under the direction of chef director Tommy Banks and head chef Alice Power, the Michelin-starred restaurant continues to champion hyper-seasonal ingredients, innovative preservation techniques and a uniquely immersive dining experience rooted in its rural surroundings.

As head chef of Number One, John Munro has established a style of cooking that celebrates Scotland's outstanding natural larder through refined technique and modern creativity.
Having previously worked at The Black Swan, Munro maintains a strong affinity with the restaurant's philosophy, making this collaboration a fitting reunion between the two kitchens.
The collaborative menu will showcase the culinary signatures of both chefs, weaving together influences from Yorkshire and Scotland through a series of thoughtfully curated dishes.
Guests can expect a celebration of seasonal ingredients, combining the produce-led approach and innovative techniques synonymous with The Black Swan alongside Number One's refined and contemporary interpretation of Scottish cuisine.
John Munro said of the collaboration: “To be able to work in the capacity with The Black Swan is incredibly special for me. My time there played a huge role in shaping my approach to cooking and my appreciation for ingredient-led menus. Alice is an exceptional chef, and bringing our two kitchens together at Number One creates a fantastic opportunity to celebrate the produce, people and philosophies that connect us.”
Alice Power added: “John's connection to The Black Swan makes this collaboration particularly meaningful. Both restaurants share a genuine commitment to seasonality, sustainability and allowing exceptional ingredients to shine. It will be a pleasure to work alongside John and the Number One team.”
The collaboration will run as part of Number One's regular dinner service, with all bookings made for dinner on Monday 28 September automatically enjoying the collaborative chef menu. Reservations can be made via the website or by emailing [email protected].
