The lofty restaurant, located on top of Calton Hill in the city centre, is launching Summer at the Lookout on Thursday 30 July - the day it reopens following lockdown.

Summer at the Lookout is a re-imagined take on the traditional restaurant service, and diners can expect the usual care and attention to ingredients and provenance.

Dale Mailley, chef and owner, has created a menu to ensure a safe and relaxed dining experience, to be enjoyed while taking in the panoramic views of Edinburgh.

What to expect

The set menu of six plates will be served from 12 noon until 9pm and will include mackerel, mussels and saffron, a dish of scallop, turbot, langoustines, summer vegetables and caviar and finishes with a dessert of chocolate, rye, hazelnut and cherry .

Filter coffee and loose-leaf tea will be included in the set £25 per person price.

A spokesperson for the restaurant said: "Upon arrival, guests will receive a tray of small and flavourful dishes that are centred around the best ingredients of the season from our favourite producing partners."

Limited bookings will be available for the Terrace, the Lookout’s small courtyard looking over the Edinburgh skyline.

For those looking for a drink to be enjoyed alongside the menu, Peter Adshead has curated a small selection of wines that can be paired with each dish.

There will also be aperitifs, including a Garden Cocktail and English sparkling wine from Camel Valley will be available by the glass to complement the meal.
