Edinburgh home baker Laura is mixing it with the best

The constraints and sacrifices of lockdown have helped open the door to new career in retail for home baking enthusiast Laura McLaughlin.

From her home in the Capital, the former Currie High School pupil recently launched Laura Lochlin Cakes, catering for those being denied the luxury afternoon tea experience by a reluctance to return to busy coffee shops and restuarants.

“My main inspiration was the desire for an indulgent cake experience at an affordable price at home with my family. When I celebrated my birthday in April, I was unable to go out for afternoon tea as I normally would, so I created my own,” says Laura, 35,

“I’ve always been passionate about baking and lockdown gave me the opportunity and the time I needed to turn it into a business.”

Her innovative themed cake boxes, all available for home delivery or collection, include a movie box with popcorn and pretzel themed cakes, a lavish afternoon tea box, a scone tasting experience box and an eye-catching box of cupcakes, all featuring different toppings and chocolates.

With Hallowe’en approaching, Laura has also created a £20 party box filled with pumpkin scones and cute ghost truffles, mini mummy brownies and chocolate caramel parfaits

She adds: “This year has been tough on everyone but with Laura Lochlin Cakes there is still the opportunity to send beautiful cake gifts to family and friends and the option to treat yourself to an experience at home as if you were in a hotel or gorgeous cafe.”

Far from being a sideline, Laura intends to give the new business her full attention after recently being served notice of redundancy from her job as a training supervisor in the financial services sector, as a result of the ongoing crisis.

Cake boxes are available to order and collect seven days a week, with the delivery service available across Edinburgh and the Lothians at the weekend.
