Fun in the sun for Capital chef

AWARD-winning chef Paul Wedgwood is to cook up some classic Scottish flavours, as guest of honour at the Celtic Festival in Barbados.

Mr Wedgewood, who runs Wedgwood restaurant on Canongate, will travel to the Caribbean island for a week of cultural exchanges, heritage, music and food.

He will host a lunchtime cooking demonstration as well as prepare a special dinner for one of the live music events, creating a fusion of Scottish and Bajan cuisine.

He said: “I’ve already done lots of research into the local produce and flavours in Barbados, and they’re amazing.

“I’ll be combining the best of both cultures, including a unique version of cranachan.

“Instead of using whisky, I’ll blend the fruit and whipped cream with Bajan rum.”
