'Innovative' coffee brand ZerøBars opens first pop-up cafe at Edinburgh's Waverley Market
ZeroBars, an ‘innovative’ specialty coffee company has officially opened the doors to its first pop-up café in Scotland.
Located in the main food court area at Waverley Market on Waverley Bridge in Edinburgh, the new café introduces a fresh approach to specialty coffee, combining carefully sourced coffee with an innovative cold extraction process to deliver exceptional quality coffee in moments rather than minutes.
Situated within one of Edinburgh’s busiest transport and retail destinations, the new location has been designed to meet the needs of commuters, visitors and coffee enthusiasts alike.
Customers can enjoy a full menu of expertly prepared hot and iced coffees, alongside a range of refreshments, all served with the speed and consistency that underpin the ZeroBars concept, the team say.

The opening marks a significant milestone for the business as it expands into Scotland, with Waverley Market becoming the home of its first Scottish location.
Ryan Garrick, Co-Founder of ZeroBars, said: “We’re incredibly excited to open our first pop-up café in Edinburgh. Waverley Market is the perfect location for ZeroBars, bringing together commuters, visitors and coffee lovers from around the world.
“We’ve spent years developing a different way to produce and serve specialty coffee, and we’re looking forward to welcoming customers and introducing them to the ZeroBars experience.”
ZeroBars was founded by a team of coffee specialists with a vision to rethink how coffee is delivered as it doesn’t use a traditional espresso preparation as the base for its coffees.
Instead the company’s proprietary cold extraction process creates specialty-grade liquid coffee that is carefully extracted over many hours before being ready to serve. The result, the team says, is “exceptional flavour, consistency and convenience without compromising on quality.”
The launch comes as Edinburgh prepares to welcome millions of visitors during the Edinburgh Festival Fringe, offering residents and visitors alike the opportunity to discover a new coffee experience in the city centre.
