Edinburgh restaurants: award winning Galicia inspired restaurant, The Spanish Butcher, comes to the capital

RUSK & RUSK, an independent Scottish restaurant group will open their latest dining experience on North Castle Street next year

Edinburgh food lovers have something to look forward to next year with news that award winning restaurant group RUSK & RUSK will open their famous dining concept, The Spanish Butcher, in Edinburgh.

Famed for its distinctive Galicia meets Brooklyn proposition, The Spanish Butcher will arrive on North Castle Street in spring 2024 – a unique new addition to the capital’s dining scene.

RUSK &; RUSK has been widely credited in redefining the steak house concept in Scotland for almost fifteen years across its restaurants with provenance-oozing produce, on-point service, and lively, seductive ambiences.

The 90-cover restaurant promises vibrant Spanish and Mediterranean-inspired flavours across an à la carte menu, married with the very best homegrown produce from Scotland’s larder. Diners can expect the most delicious and unique cuts of steak and the freshest seafood ingredients on the menu.

Unique cuts include their famous dry-aged prime rib of beef or porterhouse cuts from the Rubia Gallega breed of cattle native to Galicia in north-western Spain. Other delights include grilled Presa Iberico, 30-month aged Jamon Iberico de Bellota, whole roasted Shetland monkfish on the bone with chorizo and caperberries, grilled octopus, as well as the finest Scotch steak and whole roasted suckling pig to share.

Diners can also enjoy The Spanish Butcher’s now legendary appetisers including Gordal olives, Padrón peppers and Manchego truffle fries.
