Edinburgh vegan food truck Fancy Brunchy to roll into city centre for Omni Centre food event

The ‘Fancy Brunchy’ truck is coming to the Edinburgh street food event at the Omni next month.

An Edinburgh chef has launched a vegan food truck, after her home-cooked dishes proved so popular she outgrew her kitchen.

Gemma Costa, from Naples, opened her doors to friends to share her culinary creations after she arrived in the Capital nine years ago. Word spread and her kitchen became too small to cater for the in-demand grub. Now, she has developed it into a business and is set to launch a food truck specialising in her greatest passion – brunch.

Fancy Brunchy will be serving at the Omni for the Edinburgh Street Food event in November and again for four days in December, before travelling to cater at events and gatherings around the country. Gemma, 36, says the truck will bring something fresh to the vegan culinary scene. While eating out with her wife Marta in Edinburgh, Gemma felt there was an opportunity to do something different with lovingly-prepared vegan options in a sustainable way.

Her culinary journey started at a young age with her mother's constant experimentation with food which she says ignited her love for cooking. Travelling round the world gave her a chance to explore different flavours and culinary traditions and shaped her into the chef she is today.

Ahead of the launch of the food truck venture with Marta, Gemma said she hopes that her food will help to redefine the vegan eating experience as fun and vibrant. Their ‘no meat, still neat’ menu features an all-day breakfast stack, vegan haggis and tatties, mushroom and truffle on toast. Loaded wee pancakes are made with fillings like vegan bacon, haggis, truffle mushrooms. Gemma is known for coming up with quirky new combinations, like her desert pancakes made with pistachio cookie dough, caramelised nuts, lemon drizzle and popping candy.

Fancy Brunchy will be serving up fresh, vegan fare at the Edinburgh Street Food event at the Omni Centre on November 4, 5, 17, 18 and 19 as well as December 9, 10, 16 and 17.
