New 'five-star dive bar' offering rotating cocktail menu opens its doors in Edinburgh's West End
Understory’s first cocktail menu is inspired by British childhood memories
A brand new cocktail bar dubbed a “five-star dive bar” has opened its doors in Edinburgh’s West End.
Understory has thrown its doors open in the underground vaults of the famous Rutland Hotel building, with the new premises being run by Bramble manager Sam Baxendale and Rutland Hotel’s head of bars James Grant.
The new cocktail joint was launched with a £100,000 investment from the Signature Group and has supported 15 local jobs.

With a name derived from the hidden layer underneath a forest canopy, Understory will offer up cocktail made with fresh ingredients, some of which have been crafted from scratch by the talented team behind the bar.
A rotating cocktail menu will capture the concept of nostalgia. The first menu on offer, titled ‘Batch 01: Halcyon Days’, draws inspiration from childhood memories, the team promise, with colours, flavours and aromas of penny sweets and summer favourites.
As well as tipples, visitors to Understory will also be able to grab small places such as beef tartare and caviar with crisps, barbecue corn ribs, and chicken tenders served with Champagne.
Sam Baxendale, said: “Understory is officially open and welcoming guests.
“Some have asked how we've managed to turn this project around so quickly? It's down to the hard work, dedication and excitement of the team. We hope this is felt when you visit us.”
Understory is open seven days a week from 4pm until 1am Sunday to Thursday, and 4pm until 3am on Fridays and Saturdays.
